I am going to answer both of your posts here. However, before I answer your actual questions, I'd like to make a comment: Our Forum Policy requires that you use a real email address when posting here. You can hide your email from getting displayed to public. Therefore, please use your correct address to post messages.

Answer 1: NDRs will always have a blank MAIL FROM. This is done by design to prevent an infinite loop of NDRs. You should not run into any problem by an incoming email with blank MAIL FROM. Could you please tell me what is the exact problem?

Answer 2: The Date header is set by the MUA (mail user agent), such as Outlook or Thunderbird, not an MTA (mail transfer agent), such as Xeams. May I know which software are you using to generate your email?

An MTA will add "Received" headers in the message, which will contain a date. However, this date is different than the DATE header of an email (RFC 2822).
