Maybe someone can shed some light on this. The odd time we will receive an email and the From and To fields are the same (they are the senders address). 99% of the time we will get them. However, they don't always come through as because they are both the same address (the senders address), there is no email in our company to collect the mail and so it ends up sitting in Xeams.

If I log on to our mail providers cpanel, I can see the email with the correct To address (info@) which is how we correctly receive the email yet somewhere in the collection of the email by Xeams, the To address is being changed. See below source code:

Mark,

This happens when someone sends you an email and puts your email address in BCC (Blind carbon copy). By design, addresses specified in BCC are hidden from the email client and therefore, you will not see them when viewing it.

The headers you highlighted in yellow are coming from the SMTP envelope. Check  http://www.xeams.com/difference-envelope-header.htm for details.
